If you are interested in learning about the traditions and culture of Sicily, then understanding the local gastronomy is a fundamental part. There can be no where more fitting than the estate of Prince Gabriele Alliata di Villafranca near Taormina. 

For vacation guests of Le Case del Prinicipe week cooking classes can be arranged in September, October and November 2016 as well as the months of May, June, July, September, October and November 2017. All require a week long stay at this luxurious country setting surrounded by fruit orchards and vineyards from Saturday to Saturday or Sunday to Sunday.

Taste of Sicily cooking

Taste of Sicily is a exclusive culinary workshop set in the beautiful estate of Prince Gabriele Alliata di Villafranca in the countryside of Taormina and is a one off week course run by cook and author Stefania Barzini in June. Read more about Stefania below but here is a summary of the cooking week.  

Day 1

Arrival in Catania and transfer to Le Case del Principe. Enjoy a walk through the estate, relax and even a swim in the pool. Welcome dinner and Sicilian aperitifs.

Day 2

After breakfast, first cooking class with Stefania which will feature such dishes as panelle, arancine, pasta con le sarde, insalata di finocchi e biancomangiare. After lunch and a siesta, a 4 pm transfer to Linguaglossa on the slopes of Etna and  visit of a local winery for wine tasting.

Day 3

After breakfast the second cooking class will focus on the importance of wheat in Sicilian recipes, from sfincione and sformato di anelletti to cassata. After lunch and a siesta, a 4 pm transfer to Acireale to visit the Mediterranean garden of a local aristocratic. There follows a classical music concert and dinner with the owner.

Day 4

After breakfast, transfer to Catania for a visit to the city's food market and a guided tour of the historical center. Lunch is at Palazzo Biscari with the owner Princess Paternò Castello. The third cooking class takes place in the afternoon at Le Case del Principe and looks at Sicilian cheeses and related recipes such as cacio all’argentiera, braciolette alla messinese and cannoli. Dinner ends the day.

Day 5

After breakfast the theme of the fourth cooking class is fish and vegetables: sarde a beccafico, polpettine di pesce spada, parmigiana di melanzane, insalata di arance con aringhe affumicate. After a siesta there is a 4 pm transfer to Zafferana Etnea, capital of the well renowed Sicilian honey to meet the artisans and enjoy honey and cheese tasting. A pizza dinner in the garden Le Case del Principe ends the day.

Day 6

After breakfast the fifth cooking lesson focuses on the cooking of the Aeolian islands from spaghetti con pesto crudo all’isolana to sweet and sour rabbit, zucchini fritters and sfinci of Ginostra. The usual 4pm transfer is to Taormina and Castelmola where there is time for shopping and visit local pottery artisans. A candlelight dinner by the beach ends the day.

Day 7

After breakfast the final cooking lesson is all about meat with recipes such as polpette all’agro dolce, falsomagro, couscous with chicken and vegetables. The afternoon is free to relax by the pool. Evening is a farewell dinner at Le Case del Principe.

Day 8

Breakfast and check out. Transfer to Catania airport.

Stefania Aphel Barzini

Although designed around a series of cooking lessons with Stefania Barzini, it is the context of place, time and history which makes Taste of Sicily so unique and authentic. You will visit houses and gardens, meet incredible people and learn about ingredients and dishes amidst anecdotes and personal experiences.

Stefania Aphel Barzini is a chef, writer, journalist and TV author who has always been involved in the culinary world. She lived in Los Angeles for many years teaching Italian regional cuisine to American clients and where she also organized events and dinners for the Italian Cultural Inatitute.

Returning to Italy, she started a cooking school for foreigners near Rome as well as running a catering business before Gambero Rosso called her to help set up their famous satellite televison channel. This led to wide collaborations for magazines, documentaries, food writing courses and a long and distinguished list of food themed novels, biographies and cookbooks
