The best of an #ItalianCookingHoliday from the balcony of Abruzzo

Join Chef Ezio and his friends for a 3 day Italian cooking break to familiarize yourself with the authentic regional cuisine of Abruzzo, its wines, villages, mountains and coast. Your base is the town of Prezza located close to Sulmona in the heart of a region just 2 hours from Rome. It is an idyllic hilltop spot with a fabulous view at 480 metres above sea level over the Peligna valley.

The history Abruzzo, if not Italy, has been fought out here over the centuries, but you may like to learn that this is the land of Montepulciano d’Abruzzo wines, Corfinium liqueur and a great base to explore the territory. Participants of the cooking week can stay in a recently restored boutique B&B in Prezza. Each morning starts with breakfast of freshly baked pastries from the best family bakery in town and a range of local fruit, cereals, cheeses etc

DAY 1 - Arrival in Prezza, 0km food reception, tour of Prezza, wine tasting, welcome dinner and preparation

After your airport transfer, you will start to relax with a buffet reception of local wine and food specialties of the region such as salami, prosciutto, local pecorino and cacciota cheeses, all paired with wines from family run wineries. There follows a cultural tour of Prezza with fluent English speaker Luigi who will also accompany you for a wine and liqueur tasting at the local family run boutique winery called Praesidium. A 4 course welcome dinner takes up the evening, but not before participants help with the selection of vegetables and herbs from a local garden and prepare the dishes together.

DAY 2 - cooking class, olive grove visit with olive oil tasting, cooking demonstration with saffron, evening dinner on a trabocco

After a leisurely Prezza breakfast, a first cooking lesson focuses on the dishes of all the provinces of Abruzzo together with local red and white wines during lunch. An afternoon visit of organic olive groves in the province of Chieti follows as does a tour of an olive oil museum with organic olive oil tasting. A cookery demonstration based on saffron of the Navelli plain is next with a late afternoon 'merenda' in the farm's cantina. A trip to a trabocco on the Adriatic Coast is lined up for the evening and a 10-course fish feast all accompanied with local olive oil, mixed salads and fresh pastas.

DAY 3 - Sulmona and confetti factory visit, cooking lesson, Scanno, evening sagra feast

After breakfast, a visit of the city of Sulmona and its historic street market in the Piazza Garibaldi. Here you will carefully choose seasonal ingredients for an afternoon cooking lesson. Before returning to Prezza there will be a quick stop at Pelino, the region’s famous sugared almond factory and confectionary maker where you will taste delicious tenerelli. Once back in Prezza and before the cooking lesson, the local butcher will demonstrate how to make the local sausages. The cookery lesson leads up to lunch which includes a food quiz and blind wine tasting session. The afternoon features a visit of Scanno to discover the famous filigree jewellery, lacework and unique local costume of this iconic town. The final evening in Prezza is a colourful local summer sagra with plenty of food and wine made of local dop products as well as the unmissable arrosticini. Live music will accompany the event.
