Coppa del Cardinale

Coppa del Cardinale is the pork you may see in take away pizza and sandwich bars.

A light red color, moist in appearance and perhaps a touch fatty, it is incredibly tasty with white, fresh pizza bread 'pizza bianca' and a slice of mozzarella cheese.

An ideal snack to replace energy lost walking around the sites and sights.

The first ambassador for this meat was Cardinal Giulio Alberoni from Piacenza. He is known as the inventor of the 'diplomatic lunch' or 'pranzi diplomatici'. He knew that the best way to a decision maker was through his stomach.

Apparently, he was also a good cook and his legacy remains in a timballo dish of maccaroni pasta, shrimp sauce, mushrooms, butter and cheese.
