    This famous recipe is a typical Ligurian Easter pastry which dates from the XIV century. In the original torta pasqualina from Genoa, the puff pastry is very thin and made with 33 layers. If only we had the time to do this now, so pre-prepared pastry rolls are a make do. The genuine Ligure Easter pastry features cheese known as 'quagliata', but as it is now difficult to find, 'ricotta' is the nearest cheese to use instead. A few years ago we were invited by Sanremo Promotion to see the city and wider province of Imperia in Liguria.
