We have taken this small food reference from the booklet 'Dal Cervino alla Scoperta di Una Valle' by the Comunità Montana Monte Cervino.

We quote:

The tradition of wine making goes back to old times. The first record of the production of Muscat wine in Chambave comes from the 14th century. Clairet and Chambeve Passito were enjoyed by Charles VIII of France way back in 1494. Today, grapes are processed and sold at the modern cooperative 'La Crotta di Vegneron'. The wine festivals of Chambave, Chatillon and Saint Vincent take place in September and October. Even water is highly esteemed in the town of Pontey as a stimulant for the appetite. Just as well considering such meat dishes as 'mocetta' and 'boudins', cheese dishes such as 'fonduta', 'carbonada' and the tasty black bread made with wheat and rye flour. The bread is superb when spread with Fontina DOP cheese'.
