The Papassini are typical Sardinian cakes prepared during the traditional holiday period
300gr flour, 150gr lard, 150gr sugar, 100gr sultanas, 300gr dried fruit (almonds, walnuts etc), 2 eggs, 1 grated lemon rind, 50gr candied orange. For the glaze: 1 white of an egg, 150gr caster sugar.
Soften the sultanas in warm water.
Prepare the pastry with the flour, lard, sugar, eggs. When a decent consistency add the dried fruit and orange and mix together.
By way of a tip flour the fruit so they dont all stick in the same place.
Separate into small biscuit shapes, perhaps with a cutter, and then cook in the oven.
When more or less done, paste with the glaze until they are gold and ready to eat.
