Sicilian Christmas Salad,

This Christmas salad from Sicily includes capers, chicory, lemons and green olives, but herrings and orange slices make ideal ingredient alternatives.

Follow it up with such dishes as chicken broth, pasta with sardines, bacon with capon and classic festive sweets as almond 'mustazzoli'  or mostaccioli and apple torrone with hazelnuts and pistacchio nuts.

ingredients

400g chicory, 400g celery, 100g green olives, 30g capers, lemon, extra virgin olive oil, salt.

making it

Wash the vegetables well and boil them in plenty of water.

Drain and leave to cool, then chop each into bite size pieces.

On a serving dish, mix the vegetables with the washed capers.

Then add the chopped olives, which have previously had their nut removed.

Dress the salad with more olive oil, a few extra capers and some lemon slices.
