Sicily sardine and pistacchio pie recipe

This pistachio pie recipe is taken from an email we received from the very excellent website Mare in Italy.

As can be guessed, Mare in Italy focuses on everything to do with the salty sea waters around the Italian peninsular, but in particular is an Association with the scope of protecting Italy's marine culture.

ingredients

800gr sardines, 3 potatoes, 250g clean pistacchio nuts, 5 fresh mint leaves, parsley, salt, pepper, bread crumbs, extra virgin olive oil

making it

Clean the sardines, then fillet them.

Sprinkle them with some salt, a squeeze of lemon juice, and allow them to marinate for around 20 minutes.

Prepare a oven terracotta dish by lining it with olive oil and bread crumbs, as well as the shelled and chopped pistacchio nuts.

In the dish, create a layer of sardines, then a layer of sliced boiled potatoes, then more pistacchio nuts and olive oil.

Repeat the process until all the ingredients are finished.

The final layer should be covered in the remaining breadcrumbs and nuts.

Before serving add the mint leaves and parsley as dressing.
