Belluno Cuisine

The traditional cuisine of the territory of Belluno is similar to that of the rest of the Veneto region, the coast excepted.

Basically, it was a case of making do as there was always a limited availability of ingredients and even cooking utensils.

Polenta is everywhere as is minestrone soup and 'gnocchi alla cadorina' made with smoked ricotta cheese.

Meat eaters may like to try the mountain goat kebabs or 'camoscio' salami.

The traditional houses had very limited space and the pots used for preparing the above dishes where hung typically over the fireplaces or on grill plates over the dying embers of the open fires.

Also make an effort to seek a cheese called 'Schiz'. This ancient cheese from the district of Belluno might just be pronounced as you hope.

It is soft, fresh, creamy and prepared with skimmed milk and butter. Has a milky flavor.
