Leccese potato pizza

CAN YOU TELL ME HOW TO MAKE THIS PIZZA DI PATATE. WHAT DO YOU DO TO THE POTATOES? BOIL? MASH?

There is a take away pizza bar near our studio which serves up a chips pizza. We have suggested to the owner to add fish pieces in batter and call it a 'pizza inglese'. We'll let you know if our contribution to the new wave of Italian cooking takes off.

ingredients

1 Kg. Potatoes, 0.5 kg. Onions, 3-4 Anchovies, Capers in vinegar, Tinned tomatoes, Black Olives, Salt and ground black pepper

making it

Boil, then mash the potatoes. The puree is then flavored with salt and pepper to taste and extra virgin olive oil from Salento (2 or 3 full spoons). Mix by hand until the paste is smooth and soft paste. Chop the onions very finely and put in a frying pan with abundant oil along with the anchovies. Cook on a moderate heat with little water. Half way through the cooking process add the capers, tomatoes (little depending on personal taste) and the olives without the nuts. When the onions are cooked and the juice reduced, turn off the heat. Next take an oven pan, grease well with oil and create a layer of potato puree. Cover with a layer of the cooked onions and then another layer of puree. Repeat until the mixture is finished and then drip a small amount of olive oil over the top after which cover with a light sprinkle of breadcrumbs. Place in the oven at 180 degree centigrade for 60 mins. Then its ready!
