Here's a very satisfying dish from the beautiful island of Elba. Anyone looking for a Spring break would do worse than considering Elba for 4 days.
The sea may be cool but the days are warm and long, and the beaches empty.
ingredients
Dried cod, onions, tomatoes, olive oil, peperoncino, salt and pepper, parsley, basil, capers, pine nuts, ripe olives, parmesan cheese.
making it
Firstly, get hold of a 'terracotta' pan which will really bring out the taste of the herbs and spices in the sauce.
Fry the chopped onions in olive oil and add the tomatoes, hot pepper, salt, black pepper, basil and chopped parsley.
When the tomatoes are nice and cooked add the cod along with a handful of capers, pine nuts and olives.
Cook over a medium heat for a while and add water if the dish begins to dry out.
When fully done serve with gratings of parmesan cheese.
