300 gr. grated bread, 200 gr. grated 'formaggio di fossa' cheese, 100 gr. grated parmigiano reggiano cheese, 5 eggs, nutmeg, grated lemon rind.
making it
Mix together all the various grated ingredients then add the eggs, nutmeg, lemon rind and form a decent consistency.
Put the mixture to one side for at least 2 hours in the fridge.
With the mixture now ready prepare the 'passatelli' pasta using a suitable pasta maker.
The pasta should be then cooked in a boiling chicken stew for around 2 minutes.
Serve on deep plates.
