regional italian recipes
All the regional and traditional Italy recipes featuring in the website have been forwarded by local gourmet contacts, such as luxury restaurants and family trattoria.
Or else taken from the various brochures and informational releases we receive from the many regional tourism boards in Italy and translated by us into English, perhaps for the first time.

A word about recipe measurements. Traditional Italian dishes are made with that all embracing term 'q.b.' or 'quanto basta' meaning 'as much as is needed'.
It is a measurement passed on from generation to generation and hard to define. But for most of us who need a little indication, consult the following conversion table.
1 lb (16oz) = 450 gr; 1/2 lb (8oz) = 225gr; 1oz = 25gr; 1kg = 2lb 3oz; 500gr = 1lb 3oz; 250gr = 9oz; 100gr = 3.5oz; 1 teaspoon = 0.33 fl oz; 1 cup = 0.5 pints (8fl oz); 1 litre = 35 fl oz;
Choose your dish for the day by using the recipe search tool below and browsing by region, name or the course you are interested in.
Alternatively, simply follow the quick links in the left column where we have listed each recipe by region as they are added.
